MOST OF US CAN'T VISUALIZE HOW A STUFFED POTATO CAN BE LOW IN CALORIES AND DELICIOUS AND BE SERVED AS A MAIN COURSE.
2 8 ounce potatoes, baked
1/2 cup onions, chopped
3/4 cup red peppers, chopped
6 ounces lean sliced ham, diced
1/2 cup shredded low fat cheddar cheese
Cook onions and peppers in microwave until soft. Drain liquid if any. Saute peppers, onions and ham in a spray coated pan until slightly browned. Split potatoes and mash mixture in with potatoes. Place cheese over potatoes and bake in 400 degree oven for about 15 minutes.
Serves 2, about 285 calories per serving
Hint: If you want to save calories, use fat free cheese and spray the top of the cheese with Pam-type spray before putting into oven.. Fat free cheese does not melt easily. You will save about 40 calories per serving by using the fat free cheese.
Variation: Sauteed mushrooms and roast beef is an interesting substitute for the ham. That recipe was in an August post on my blog.
