I HAD TRIED MANY RECIPES FOR A GOOD TASTING CREAM SAUCE THROUGHOUT THE YEARS AND FINALLY INVENTED A WINNER..IT JUST TAKES SECONDS TO PREPARE.
POTATOES ALA KING
2 medium baked potatoes (about 8 ounces uncooked weight). Cut the cooked
potatoes in half lengthwise and remove insides. Mash potatoes and scoop
back into shell.
Hint: Par-cook each potato in microwave about 3 minutes and bake last 15 minutes in 450 degree oven. It is is much better than cooking in the microwave alone.
1 cup cooked turkey or chicken, diced
7 ounce can salmon, drained
6 ounce can or package white meat water-packed tuna, drained
1 cup cooked shrimp
VEGETABLES:
2 to 4 cups of any cooked combination of the following:
mushrooms,broccoli, carrots, zucchini, red or green
peppers or any low calorie vegetables, fresh or frozen
SAUCE:
2 envelopes of Lipton's Cream of Chicken Cup-a-Soup
4 teaspoons cornstarch
1-1/2 cups cold water
Mix dry soup with cornstarch and water and cook in medium sized pan. Stir until sauce thickens. Add poultry, canned fish or cooked shrimp and vegetables to thickened cream sauce and simmer; stirring often until mixture is heated. Place split potatoes into 2 dinner plates or in ramekins and reheat in microwave. Pour the hot cream sauce mixture over the potatoes.
serves 2, averages about 350 to 375 calories per serving.
