MY YEARS AS A FOOD ADDICT

I was a heavy eater by the time I was 5 years old, only it was called a "healthy appetite" in those days, and they called me cute and chubby. By the time I was 18 I was a compulsive overeater. At 5'6", my weight ranged between 125 to 149, but only because I spent part of almost every month on some diet or another. I must have gained and lost more than 500 pounds on various crash diets before I turned 40.I could eat 3 half gallons of ice cream a week and 3 candy bars at the movies. At my favorite Oriental buffet I would start with 6 egg rolls and fill my plate (and myself) so much that the owners lost money. No matter what diet I tried, I dreamed of my next “fix”… boxes of cookies, bags of potato chips or maybe a whole pizza.I’ve always been an upbeat person with a good marriage, two children, and close friends, but on my 40th birthday I was feeling depressed. I took a walk on the beach and realized that my compulsive eating had to stop. I decided that I wanted peace more than pizza and vowed to put my extensive dieting knowledge to work. I re-read all of my material on the subject and designed a way of eating that would satisfy me and finally curb my appetite. My determination paid off in spades and changed my life. The numbers on the scale remained below 130 and before I knew it, I was helping curious friends and neighbors. That was the beginning of a long and exciting career founding and directing Diet Masters, teaching dieting classes and low calorie cooking and even self publishing 6 dieting books. Best of all, my weight has been stable between 124 and 129 for 39 years while I eat food that I enjoy.

USTA(a poem)

I usta eat a lot of stuff
Because that stuff was there.
I usta never have enough
I'd want more than my share.

I usta fill my brimming plate
Once, and then once more.
I usta laugh at calories
Who was keeping score?

I usta, yes, I usta
But now I wouldn't try it.
'Cause what I never usta know
Is now my lifetime diet.

MY SATURDAY SINS (a confession)



This story goes back to about 1968. My husband was a salesman for the Pillsbury company in those years and I was a stay at home Mother with two children 2 and 5. At least once a month, he would give me an afternoon off to have a change of pace and relax.

Did I go shopping for a new wardrobe or to a movie or on a date with a handsome neighbor? NOT ME..I did not want to spend money on new clothes because 'I knew' that I was going to lose weight and the clothes would be too large for the future thin me. I felt that it was lonely to go to a movie alone.
As for the 'handsome neighbor' : to tell the truth, my handsome Texan was better looking than all of them put together in my eyes.

Where does the confession come in? I always used to drive a few miles to a place called 'The Farmers Market'. They had clothes and toys but I was looking for my FIX. I would get a few chocolate frosted donuts and walk around as I ate them and then I stopped for a milk shake. Walked for a while, and worked up an appetite for a large pretzel and bought three large chocolate chip cookies. My husband often asked why I did not get one for myself and I just smiled and said that I just did not want any.

At the end of all of my weekly meetings, I would say a few words that would give them a hopeful upbeat feeling. Sometimes I would call them WORDS OF WISDOM. Each week it was something different.

EXAMPLE: "Everybody, try your best and bring in a loss. Maybe some of you can tell us how you did it. ALSO, FOREVER MORE..YOU WILL NEVER BE EMBARRASSED OR SINGLED OUT IF YOU GAIN WEIGHT IN THIS CLASS".

SOME 'SHRIMPLY' WONDERFUL IDEAS




START THESE RECIPE IDEAS WITH LARGE SIZED COOKED SHRIMP

I do this the 'easy way', I go to my neighborhood Costco and purchase one pound of already cooked shrimp. Hints: Always check the date on the package wherever you purchase them.
I put a small sealed bag of ice cubes on top of the shrimp and cover them both. If I do not plan to use all of them within 2 days, I freeze that portion right away.

Fix It Your Way Shrimp Lunch for One

1/4 pound shrimp
Use all of your favorite vegetables..(I mean all) lettuce, tomatoes, sliced olives, red peppers,
or a trio of fresh peppers: red, green and orange, jarred artichokes, and whatever else you can
think of that is not starchy.
Dressing: You can either just use cocktail sauce or 2 tablespoons of your favorite low calorie
dressing that is under a total of 60 calories.
TREAT YOURSELF TO 100 EXTRA CALORIES: It could be a small roll with a smidgen of diet
margarine or 1/4 of a cup of crumbled feta cheese. I AM GETTING SOME VIBRATIONS THAT YOU HAVE A QUESTION: YES, YOU MAY HAVE A SMALL GLASS OF WINE AS YOUR
100 CALORIE BONUS. WHY NOT...GO FOR THE GOLD!!!!

EXPLAINING THE FOLLOWING POST

As I mentioned in the beginning of my blog, I was a compulsive eater for many years. Some of my readers are still fighting the long battle of the bulge, while others are trim people who never had a weight problem.

In the next post, I show examples of how people can eat 3 well balanced nutritious meals that total under 1200 calories a day on a reducing diet and they sabotage themselves by devouring 1,560 calories from snacks .

EATING 3 MEALS A DAY PLUS CAN =2,530 CAL.



SOME DIETERS SET UP GREAT MEAL PLANS THAT ARE FILLING BUT THEY SABOTAGE THEMSELVES BY NIBBLING ALL DAY LONG. THEY DO NOT REALIZE WHAT DAMAGE THEY HAVE DONE UNTIL THEY GET ON THE SCALE. THE FOLLOWING MATERIAL WILL BE AN EYE OPENER.

Breakfast: 1/2 cup orange juice, 1 egg, 1 slice 50 calorie bread with Laughing Cow cheese.
about 220 calories

snack: Part of a medium-smallish muffin
about 150 calories

Lunch: Water packed white meat tuna sandwich on 2 slices of 80 calorie rye bread with lettuce
and tomato and lite mayo and a large apple.
about 470 calories

snack: A 200 calorie bowl of homemade banana pudding and a slice of rye bread with a glob of peanut butter. (that glob was nearly 2 tablespoons)
about 460 calories

Dinner: A very lean 4 ounce steak, a small baked potato, 2 tablespoons low fat sour cream a salad with lite dressing and asparagus tips.
about 450 calories

Snack: but much more than a snack: Less than a cup of dry granola cereal to nibble on while they were watching television. Then a little more granola cereal with skim milk and part of a banana, a few cookies, a 'smallish amount' of potato chips (well maybe 20)and a large Fat Boy ice cream sandwich.
about 950 calories
*note...Most people do not realize that granola cereal, even the low fat variety, is more than 400 calories per cup.

SISTER AND I ARE CLOSER FROM THE BLOG

Here she is living in California and I am in Florida. We have warm, loving feelings for each other and have been emailing for years, but now that I am doing my blog we are even closer than ever.

She helped me set up the blog. At this point, until I learn how to put pictures on the blog, she is doing this job for me.

I scanned the blog this morning and then read the newspaper. When I came back to it 3 hours later: there was a great little picture on my latest post. Thanks, sister Bobbie (she would like me to interject that she is 'younger'. OK Bobbie: she is 10 years younger.

I AM IN THE MOOD TO TALK ABOUT DIETING

With the exception of doing a few private consultations each week I am officially retired after 40 years. This blog is keeping me content and I look forward to our 'daily visits'.


ADVICE: Do not feel guilt free or sanctimonious if you share a dessert at the Cheesecake Factory. It can be as high as 1600 calories. Their brownie with ice cream and fudge sauce racks in a whopping 1100 calories. Having half of these would still be outrageous if you are serious about losing weight.

DIET SODA: If you are tired of diet Coke, try diet cream soda or root beer.

LOW CALORIE WAY TO START A MEAL: Have some broth and fill it with frozen or fresh cooked vegetables. You will tend to be satisfied with a smaller main course.

WOW: FAD DIETS ARE LIKE PLAYING RUSSIAN ROULETTE...They can rob your bodies of its needs and damage your health.

FOOD FOR THOUGHT AND SOME GOOD HINTS

FAT IN FOOD

You do not have to binge or overeat to gain weight. If you use ONE EXTRA TABLESPOON OR MORE OF FAT IN YOUR FOOD A DAY than you had been eating, that would amount to 45,625 extra calories a year. During that time you could gain 12 pounds.

One way to save calories from saturated fat would be to put an unopened can of soup in the refrigerator for several hours or over night and a few globs will usually come to the surface. Remove them with a spoon. It will not effect the flavor.

When we purchase 2% low fat milk , we tend to visualize that if the fat came to the top, the fat would be a very tiny part of the product. FIGURE IT OUT MY WAY: Read the stats on the label. One 8 ounce cup is 140 calories and calories from fat are 50 calories which makes that over 33% calories from fat. The skim milk is 90 calories a cup and has 0 calories from fat.

"FOOD FOR THOUGHT"





IF YOU DON'T USUALLY KEEP THE WEIGHT OFF ONCE YOU LOSE IT...ANALYZE WHAT HABITS YOU HAD WITH FOOD THAT CAUSED YOU TO REGAIN THE WEIGHT AND CORRECT THE PATTERN. (read and re-read these important words)

MORE FOOD FOR THOUGHT
I will tell you my meaning of the following sentence.........

If you can't just taste a dessert don't touch it.

DEFINITION :

It means that you are tempted to have a little taste of a dessert but you know that once you start nibbling you end up eating almost the whole thing. You should not get started in the first place because it will ruin your diet.

There are ways to get around it. Throw most of it in the garbage FIRST and just enjoy the very small amount that is left. How can I even advice wasting such good food? Would it be better to eat it all and have it on YOUR WAIST and all over your body ?

There will come a day that you will be able to enjoy just an edge of that dessert and walk away from it. Believe me, no matter how addicted you are to desserts, you will one day be in control..I used to devour an 8X8 pan of nut brownies in one sitting. I just said "one sitting". It put a grin on my face; I should have said "standing." It seems that when we are overeating and devouring food we do it standing up.

AN AD I ONCE PLACED

I once ran the following ad in the local paper for Diet Masters that 'sort of told it like it was'.

I should have written the following but know that (these tongue in cheek words) would have bombed but they make good sense.

INEXPERIENCED DIETS WANTED

Inexperienced dieters usually do really well when they join DIET MASTERS because THEY DON'T PLAY GAMES, THEY JUST FOLLOW THE PROGRAM.

If you analyze what I wrote in this post, you will realize that many people who have dieted for years 'think' they know enough to make their own rules and do not follow a program to a T the way new comers to dieting do.

WHO LIKES ICE CREAM CONES EVERY DAY?



Directions: No...NO...There is no ice cream..But, you will be eating a wonderful semblance of an ice cream cone.

Purchase Jello free pudding or sugar free pudding in the dairy isle and freeze them. I take off the foil lid and put it in the microwave for about 30 seconds, until the consistency of ice cream. It should be firm at this stage, and I just spoon it into a 20 calorie cake cone. My favorite is the chocolate and vanilla mixed.

Note: The Jello free is 100 calories and has no fat. The sugar free is 50 or 60 calories and the regular is a mere 110 calories. Many people purchase the sugar free, but it is not my favorite and the calorie count difference is minuscule.

YOU MIGHT BE SAYING: "Where is the ice cream you promised us?" If you can purchase a half gallon of light ice cream and measure a half cup and not eat another until the next day, go ahead and buy the ice cream. REMEMBER IT SHOULD LAST YOU 16 DAYS.

IS LOW CALORIE EATING ALWAYS HEALTHY?




Surprise: The answer is NO. I'm telling this story because a lovely, slender friend of mine was not eating enough calories. The following scenario will explain how dangerous it can be to eat that way on a regular basis.

'Brenda' explained that she hadn't felt like spending time cooking, and
found it easy to have the following menu at least five days a week.

Breakfast: One slice of 40 calorie toast with diet margarine and a cup of coffee
Lunch: Cereal with skim milk and a half of a banana
Dinner: A grilled cheese, using fat free cheese and 2 slices of white 40 calorie bread

I went into detail explaining what an uninteresting and dangerous way it was to be eating that way, and that it never should be 'only about calories'. If she was not my dear longtime friend I would not have told it like it is, but I want to see her have many healthy years ahead.

I suggested that we go shopping and pointed out that certain cereals were much healthier and higher in fiber than what she had been using. I suggested that she start her breakfast by putting the half banana and skim milk in with her cereal. Maybe even add a small half grapefruit or a small orange too.

Lunch would be two ounces of deli sliced turkey or chicken in a sandwich made with 1 slice of my favorite health nut bread, low fat mayo, lettuce and tomatoes and rinsed coleslaw or salad on the side. Maybe have some iced tea or even a fruit smoothie for 100 calories.

Dinner: Some nice frozen fish, or fresh cooked shrimp. (Costco has about the best fresh shrimp). While we were there, I pointed out some of their very wonderful fresh spinach that takes seconds to prepare, but she could just buy any frozen or fresh vegetable she prefers. And adding a half cup of prepared wild and brown rice takes only a minute in the microwave. Another choice would be to go to the deli at her neighborhood super market and buy a fourth of a roasted chicken or even splurge calorie wise on one piece of 'fried' chicken breast and eat the skin once in a while if she enjoys it.


If your weight is where you want it to be, this, along with careful eating will not add on the pounds.

The way she had been eating totaled under 600 unhealthy calories a day. The menu that I planned for her was about 1300 calories and quite nutritious. Are we still friends after my overbearing advice? You better believe it! I invited her to my home three times the first week for lunch and I let her beat me at Rummy Q.

THE RIGHT AND WRONG WAYS TO EAT BREAD




Bread can be your best friend diet wise, or an unforgiving enemy that will curse you with unwanted pounds. If you use two slices of bread for about 60 calories each with two ounces of sliced turkey, low fat mayo, lettuce and tomatoes along with some shredded cabbage salad with vinegar dressing, it would tally in at under 250 very filling calories.

FACING THE ENEMY

One of the most fattening lunches would be a 'bread bowl' that is filled with a very thick broccoli cheese soup at Panera's Bread. It could cost 1,000 calories or even more if you finish the whole thing.

The next 'diet killer' would be a basket of fresh, hot rolls that smells like ecstasy and arrives at your table when you are starving and have been waiting 20 minutes for your dinner to arrive.

As I mentioned in an earlier blog, I just authored a few of these poems but most were composed by a very dear friend who was a volunteer at Diet Masters for 22 years. It was self published by me in 1984 and is probably the only book of its kind.

CONFESS! DO YOU BELONG TO THE CCC'S?

That is not a warning of a government shake down.
CCC Stands for CARELESS CALORIE COOKS. They use a great deal of oil and butter when
they cook something in a fry pan. They prepare cream sauces with 2 cups of cream and lots of butter. When they cook ground beef, they do not drain the grease from the pan before adding sauce.

USE BREAD AS A BLOTTER

If you order something greasy in a restaurant similar to shrimp scampi that is swimming in oil and butter, take a piece of your roll or bread and put it near the edge of your serving plate. Gingerly blot your shrimp one at a time on the bread and 'do not eat the blotter'.

MY SOLUTION: TALK TO YOURSELF

Visualize this: the first sentence is you talking to yourself:
"It's 4:30PM. What do I want to eat?"

'The Diet Lady' giving you HARSH BUT NEEDED ADVICE.
"You don't need anything. You can wait an hour until dinner or eat your salad now. Actually, that is a good idea, because you will eat less at dinner."

9:00PM..."Oh, I would like a piece of bread and peanut butter."

"GREAT, YOU CAN HAVE IT TOMORROW FOR BREAKFAST. MAKE SURE THAT YOU MEASURE ONE LEVEL TABLESPOON ."

DON'T BE A HELPLESS VICTIM



Food does not pop into your mouth or jump into your grocery cart. Shop smart for slenderizing and healthy food: poultry..fish..lean cuts of meat..low fat or fat free dairy products..lots of vegetables (fresh or frozen)..brown rice..beans..whole grain pasta and bread..and last but not least, good fresh fruit.

You do not have to be a purist, but it is good to read labels from time to time as some items are very high in sodium and additives.

Another hint is to carefully look through the items in your shopping cart before checking out to see if there is something that will sabotage your good intentions to stay on your diet.

WORDS OF WISDOM

MOST DIETS FAIL BECAUSE PEOPLE RATIONALIZE: " DO I HAVE TO EAT THIS WAY FOR THE REST OF MY LIFE?" On my program the food is better and more satisfying than before.

WHAT FOOD CAN DO FOR US OR TO US

It gives us energy..It can make us feel happy inside...
It can give us something to talk or think about. EX: What are we going to have for dinner?
Gives us something to look forward to...such as trying a new restaurant.

IT CAN ALSO MAKE US OVERWEIGHT..DEPRESSED AND DISGUSTED WITH OUR LACK OF WILLPOWER AND 'WON'T POWER'.

DON'T DWELL ON PAST MISTAKES

With each meal you have a new beginning. Do not say, "I ruined the day and I may as well finish the rest of this casserole and pie.

BEST ADVICE

Be good to your body: Don't overload it.
The price of leanness is eternal vigilance.
You should never go back to old fattening habits.

POTPOURRI OF DIET HINTS, IDEAS &WARNINGS



1. Plain cream cheese can be purchased in three types: REGULAR that is 100 calories for 2 tablespoons. The LIGHT is 50 calories and the FAT FREE only 30 calories. My opinion is that the 'lite is right for most dieters'.
The fat free does not have a good taste or consistency in my estimation.

2. A CUTE CREAM CHEESE STORY..One of my new members came from a Southwestern state and had never had a bagel. She moved into a gated community and went to the club house with some dieting neighbors and they ordered 'scooped' bagels. When the bagels arrived they looked like a tunnel had been made in them. The dieting ladies explained that big bagels are very fattening. THE SAD ENDING TO THIS STORY IS THAT THEY FILLED THE TUNNELS 'HEAPING' WITH CREAM CHEESE. FOR SHAME!!!

3. If you have friends or a spouse who like to go out for rich desserts after a movie or the theatre and you do not want to disappoint them, just order diet soda, coffee or tea and promise yourself a smoothie or a 100 calorie dessert bar from the freezer if you feel like having something sweet when you come home. Otherwise, just brush your teeth and you are ahead of the game.

PEOPLE DYING FROM FEN-PHEN

It may have been about 20 years ago when Fen-Phen and another pill called either Meridia or Ephedra came on the market. People were leaving their dieting classes and in love with these products. They were never hungry and the weight was falling off fast.

After several months there were news stories that people of all ages were dying of heart attacks and contacting other illnesses. There were lawsuits against the companies who sold them.

THERE IS NO MAGIC BULLET TO FAST WEIGHT LOSS. IT TAKES PATIENCE, EATING HEALTHY FOOD THAT YOU ENJOY IN MODERATION, GAINING KNOWLEDGE... AND IT WILL NOT HURT TO READ MY BLOG AND 'LISTEN TO LOUISE.'

WARNING ON DIET PILL BOX



My March magazine arrived with a full page ad for a dangerous diet pill. How do I know that it is dangerous? Because they mention it about 8 times in their ad. I will put some quotes on this blog. SUPER-POWERFUL "DIET PILLS" MAKE COMEBACK THEY'RE FLYING OFF THE SHELF....BUT THEY'RE NOT FOR EVERYONE! It is for a two-part system comprised of a unique "Amphetamine Provision Complex" (for powerful appetite control, mood elevation and energy).
Excerpts From Other Parts

These pills are fast becoming a favorite for bodybuilders, college students and overstressed, exhausted homemakers for their energy and stamina-boosting properties (in other words as powerful "go-fast" pills). "While the pills do cause rapid weight loss (no doubt about that), most people buy them as "speed pills."

HOW TO SPEND 400 CALORIES

The following, gives you some ideas of how you might enjoy to splurge a little with those 400 calories:
That frozen macaroni and cheese that has been calling to you lately might be the answer.

The half cup nuts for 400 calories might be interesting.

Maybe just a small cup of that healthy sounding but high calorie granola cereal with skim milk
and banana may hit the spot.

BREAKFAST

1/2 grapefruit, 1 egg, 1 piece of 70 calorie bread 1 teaspoon jam: 19 calories
*Note: you can have 2 slices diet bread for 80 calories (it seems like more).
If 1 teaspoon of regular jam is not enough, you can substitute it for 1 Tbsp. of sugar free for 10 calories.
* Note: The teaspoon of regular jam was 19 calories.

LUNCH
(375 calories)
1 hot dog 160, 1 hot dog bun 110 calories, 1 Tbsp. chopped onion, 1 Tbsp. drained sweet relish,
1 teaspoon mustard, 1 medium sliced carrot, l cup watermelon.
* Note: BIG CALORIE SAVING BENEFIT #1: Hebrew National makes a great fat free hot dog
for a mere 45 calorie. The best way to cook it is make slashes sideways and put that 'doggie"
in the heated, Pam sprayed small George Forman Grill.

MORE IDEAS TO STAY ON YOUR DIET 'TRY IT'

BITE AND WRITE..(definition) Write down every morsel that you eat. Most people eat twice as much as they think that they do.

TWO FOR THE PRICE OF ONE....It might be a good idea if your favorite cereal or soup is on sale that way; but if the sale is for potato chips. cookies or half gallons of ice cream it could sabotage weeks of dieting.

"MUST YOU EAT FRUIT AT BREAKFAST?."....(answer) You can eat it any time of day or not at all..Just eat a nice amount of vegetables to compensate.

HOW OFTEN DO YOU GO ON A CRASH DIET AND LOSE 5-10-or 20 POUNDS and then you stick your head in the refrigerator and gain it back quickly? It is often, because it was too strict.
Don't ever give up on yourself. Learn from your mistakes; and go on a sensible diet that includes foods that you enjoy and you will find success.

LOTS OF 'THINNING ADVICE'

You will not have success if you give your diet 100% one day and 60% the next. You may not gain, but you usually will not lose.

EXCELLENT CHOICES FOR DINING OUT...Chicken or beef shish kabob with salad (dressing on the side) or steamed vegetables and a little brown rice or bread.

WHOSE DIET ARE YOU FOLLOWING ANYWAY IF YOU SAY: "I HAD BREAD FOR BREAKFAST SO I CAN'T HAVE ANY MORE FOR THE REST OF THE DAY?" WHEN YOU READ THE PROGRAM YOU WILL NOTE THAT YOU CAN EAT BREAD 3 TIMES A DAY OR NONE AT ALL.

Don't give up all of the treats that you enjoy. Just limit yourself to one candy bar under 150 calories or one smallish cookie from the super market.
Note: Only purchase one at a time, and be aware that the cookies at the mall or Paneras' bread can be 500 cal.

PEACHY AND FRUITY ADVICE



Remember these thoughts: Fruit can make you fat...OR ... fruit can be your best friend.

If you enjoy fruit and you have three moderate servings a day it can be healthy and refreshing. In my 'before Diet Masters days' I was not only addicted to large portions of food; I would eat HUGE portions of fruit.

Peaches used to be packaged in 3 pound bags and I would finish the complete amount in the course of one day. If you can't visualize anyone eating that many peaches: believe me: it is a fact. The calorie count is 480 for the 3 pounds.

Apples have a poem about them that makes us think that it is imperative to have one included in our daily diet..The saying goes: "An apple a day, keeps the doctor away." There is a rumor that a doctor's son had a huge apple orchid and he was unable to make a living with it until 'Dad' spread this rumor. OK, I am joking.

Apples used to come in various sizes, from 4 ounce to 12 ounce ones. I have not seen a 'tiny' 4 ounce apple in years. I just left the computer to weigh the ones that look 'average sized' in my refrigerator and they were 10 ounces each. That would make them 150 calories each. Think that I will have half a grapefruit for 50 calories now or maybe a medium-small California Navel orange for 80 calories.

ARRIVED HOME FROM MARKETING UPSET



If I did not get the right change, or bumped into an old beau on a bad hair day without makeup, these things would not really upset me.

The reason I came home upset was Ben and Jerry advertised two pints of ice cream for the price of one. Those pint containers looked so small it was unbelievable. I took one out of the freezer to study the stats and it read: 4 half cup servings; 270 calories each. If someone on a diet would purchase something like that they usually eat the whole thing in 5 minutes. One full container adds up to 1,080. The FREE second container costs the same calories.

One of the most sensible choices in the ice cream isle is to buy a single one-serving container of lite ice cream which is a half cup and low in fat for about 150 calories. Another really great choice would be a package of the 15 calorie sugar free fruit flavored bars. Treat yourself to 3 in one day if you wish.

Please, please, please, listen to Louise!

DON'T BELIEVE EVERYTHING "THEY" TELL YOU



In 2001 the government came up with what they called the 'new pyramid'. One of the rules was that we should have between 6 to 11 starches a day. The total calories for the starches alone would total between about 600 to 1100 calories a day. That would make it difficult to lose weight even with having the lowest daily number of 600 after you added the calories from proteins, calcium, fruits and vegetables.

Around the same time 'they' also tried to guide us away from foods high in cholesterol and mentioned egg yolks, shrimp, crab meat and lobster among the worst. After many months 'they' changed their tune and said that it was alright to have 3 eggs a week . Also that the shell fish had almost no fat so it was all right to eat it after all.

It came down to the fact that fatty meats really should be limited and liver was one of the worst culprits. If you were a Weight Watcher in the 70's and 80's and you did not lose or had gained weight one week, you were questioned to see if you had skipped your weekly allotment of liver as they claimed it was difficult to lose well without it.

SHIRLEY'S EFFORTLESS JELLO FRUIT "PIE"

1 20 ounce package frozen sliced peaches
1 20 ounce can unsweetened crushed pineapple, not drained
1 0.3 ounce package sugar free Jello (any red flavor)
1 packet Knox unflavored gelatin

Mix all ingredients together in saucepan and bring to boil,
stirring to prevent scorching. Cook on medium 20 minutes.
Pour into 9 inch ungreased pie plate and chill in refrigerator
until firm.

Serves 8, 70 calories per serving
NOTE: (No Water Added To This Recipe)

This recipe may sound a little mundane but it taste great and looks especially good
when you top it with lite Redi Whip before serving.

BEST RESTAURANT DIALOGUE



"Dry toast...no home fries with my eggs...salad dressing on the side...no mayo on my sandwich..I will have a small baked potato instead of french fries."

When the waitress is taking dessert orders and she said that it goes with the meal, say, "no thank you." Please try not to cry when you say those words. You will love yourself when you get on the scale in the morning.

(A junior club consists of turkey, bacon, lettuce and tomato with 2 slices of bread) That sandwich would be about 380 calories without the mayo.

That is not a high calorie lunch but you are 'in need' of some of those potato chips on your plate.
Oh, what to do! Eat half of your sandwich with the bread and the other half with a fork and a knife and no bread. You have earned 8 potato chips. Try to eat them slowly so that they will be more satisfying.

THE STAGES OF LOSING WEIGHT

THE HONEYMOON: You are enthusiastic, optimistic and delighted. You love the new hints and ideas and the fast weight losses. Your clothes are fitting better but you begin to crave fried foods and sweets and you become resentful that your friends can eat anything that they want to.
I guess we can say that the honeymoon is over.

Do not go on a DIETING DIVORCE. Just go on a sensible diet that includes foods that you enjoy. It may take a little longer to lose the weight but follow me. After being a compulsive over eater,
and losing and gaining over 500 pounds in the course of 23 years,I have been a size 8 for over 40 years WITHOUT HAVING TO DIET.

DIET DEFINITIONS



CLOSET EATER: Someone who does most of their overeating when they are alone and no one can see them. They forget what they have eaten and usually can't understand why they do not lose weight.

FORGETFUL DIETER "I skipped breakfast and went out to lunch and had no bread or dessert. I can't understand why I gained weight." TRUE: But they forgot about the half gallon of ice cream that they finished in two days.

PERIODIC BINGE EATER: They eat sensibly for days and weeks on end and then they get out of control and cannot stop eating until they demolish half of a cake and anything else that they can get their hands on.

I was reading an autobiography written by a beautiful slender looking woman by the name of Claire Booth Luce several years ago and this is what she wrote in her diary. "The combination of swimming, tennis and massages that I submitted to at the spa did not undo the effects of the rich French sauces and desserts that I had eaten in my travels. I am distressed to find my belt is always tight and my ideal weight of 125 pounds is still elusive. All of my life has been a struggle against fat. I am not really fat, but fat enough so that I do not believe people when they compliment me on my slim figure".

This diary was written in 1940 when she was 36 years of age. This proves that people can make themselves miserable when they are neurotic about their weight.

SOME PEOPLE SABOTAGE OUR DIETS

Some members at Diet Masters mentioned what some so-called friends said to them.
"How many times have you lost and regained weight?"
"You look drawn. Don't you think you should stop dieting?"

The following story is about my dad. We were out to dinner in my pre Diet Masters days at a lovely restaurant and I was on yet another of my diets and ordering carefully. He gave me the following 'Fatherly advice': " SISTER, YOU ARE JUST A BIG GIRL, WHY DON'T YOU JUST GIVE UP DIETING?"
Girl? I was 38 years old. He lived long enough to see me slim for many years before he passed away.. He was also alive to see me help thousands of people lose weight and write books on the subject.

LET'S GO DOWN MEMORY LANE



The first memory I have of 'diet drinks' was a powdered chocolate drink that my mother made. She notified me that it was her special diet drink. I did sneak a little sample and still remember how terrible it tasted 70 years later.

Soon after, a carmel candy called Ayds that promised miracles became popular. Then came Pro Lynn. It was a horrendous tasting red liquid. We can give Dr. Lynn credit for this one. Around that time some doctors gave people something that included the urine of pregnant women..Jumping up a few years: there was the liquid Cambridge Diet...People lost quickly on that one as it totaled 300 calories a day. As you can guess; it was not very good for their health
and it was taken off the market.

CURRENT CRAZY IDEAS TO LOSE

When you purchase most women's' magazines you will see several full page ads that cost a fortune. Most of the products they advertise can be purchased in drug stores, 'health food' stores and your neighborhood Walmart. They promise you the moon but in very small print you they state that regular exercise and a reduced-calorie diet are essential for weight loss.

TO EAT OR NOT TO EAT THAT IS THE QUESTION

Picture this: It is 4:00pm and you are tired and you ask yourself "what should I eat"? Eating is not the solution..Tired people should take a nap or watch some television or just close their eyes or relax with a book but DON'T EAT.

WAYS TO SAVE CALORIES


1. Use very little oil, butter or margarine to saute food. Try Pam and non stick pans.
2. When cooking ground meat, wipe the pan with a paper towel before adding
sauce or other ingredients. Another good idea would be to crumble the meat and put it
in the George Forman Grill..It will amaze you how much fat goes into the little tray.
3. Don't devour a meal as you are cooking.
4. Do not double starch..A half cup of pasta or rice is a serving. A smallish potato is a serving.
5. Be aware of calories...Ex. Sweet potatoes are healthy but are 400 calories a pound.

FOUR MEALS A DAY...YES?? NO??



It is a good idea to eat three meals a day but if you like to snack, break your lunch in half with the following help.

You have your usual breakfast and are completely satisfied until you have your lunch at 1:00pm . For lunch, you have a very satisfying turkey, fat free cheese, lettuce and tomato sandwich with low fat mayonnaise and a piece of fruit. NOW OUR PROBLEM BEGINS.

Three hours after lunch you feel like you could eat another meal and begin to eat everything in sight.
THE DIET LADY TO THE RESCUE: When you have your lunch at 1:00pm split it in half. Example: Lunch no. 1: Enjoy half of the sandwich with a salad or soup.
Lunch no.2: Eat the other half of sandwich and a piece of fruit OR a big smoothie

BIG SMOOTHIE

2/3 cup frozen peaches
5 frozen strawberries
3/4 cup skim milk

Put ingredients into a blender and mix with 1 package of artificial sweetener until well blended

HINTS AND IDEAS THAT WILL HELP YOU

Once you reach your goal weight, continue to keep foods such as half gallons of ice cream, boxes of cookies and crackers or anything else that you could not control before dieting out of the house forever more. If you start gaining weight, get right back on the written program and keep a record of everything that you eat.

Why should you work so hard to lose that 20 pounds and allow yourself to regain it? A good idea would be for you to read the blogs that I have written in the past two months. Something else that might help you is to re-join a dieting group.

YOU CAN CHANGE YOUR WAY OF EATING

Not all of the following hints will work for you, but it is worth a try. If you can't control snacking on a certain fattening food that is in the refrigerator, freeze it. If you begin visiting the freezer for tastes; DUMP IT. Better to be in the garbage than in your stomach adding pounds.

Plan to order the right restaurant meal choice as a TRIBUTE TO LOUISE and whisper in your mind,
"See Louise, I'm ordering all the right foods for you." (Do not send me the bill.)

Don't finish a meal with the following feeling or thoughts. "Why did I eat so much or why did I eat so fast!"

If you feel that you need cake on your birthday, treat yourself to a small cup cake.

WOW When you are tempted to overeat fattening foods and seem to be nibbling all day long: say to yourself, "If I continue to eat like this, I am giving up my chance to lose weight this week."

OFF-SEASON FRUIT MEDLEY

1 cup frozen sliced peaches
1/4 cup frozen blueberries

Partially defrost strawberries and slice. Place all fruit into a ramekin and microwave covered on
high for about 4 minutes. Add sweetener and mix.

Serves l, about 100 calories per serving

SABOTAGE AT A RESTAURANT



Now that I am on maintenance, I get on the scale every day. That scale can't walk or talk but it often guides me on what to order in a restaurant. If I am at the bottom of my goal weight, I sometimes order home fried potatoes with my breakfast.

I ordered those potatoes with my one egg and 2 strips of crisp bacon and one slice of rye toast dry with butter on the side thinking that I was entitled. I looked at my plate when the food arrived and I could tell that the potatoes had been deep fat fried in old oil. HOME WAS NEVER LIKE THAT!

I am never disappointed when restaurant food is not up to par. In my classes I mention that I love when they bring their great tasting rolls to the table that are usually served hot and they arrive cold and old. It makes me feel that the "DIET GOD" IS WATCHING OVER ME. I do not spend calories on mediocre food.

MORE HINTS AND WON'T POWER



A new member who was losing well said "I followed the program, but I was hungry part of the time".

My answer: "You might experience hunger for a short while until your appetite acclimates to smaller amounts of food. Something that may help, is to fill yourself with a lovely salad or steamed vegetables before eating your meals".

We all have two eyes, two ears and one nose but many of us do not have much willpower. We have to practise willpower to make it stronger.

I AM NOT THE GIRL I USED TO BE

Confession time: I would buy 3 candy bars before I sat down in the movie theater and 2 of
them were eaten before the picture started. Sometimes I would stop near the theatre and
buy a half of a pound of nuts or the same amount of Fannie Farmers chocolates. I never was aware of calories in those days but I can tell you now that the nuts were 1360 calories and the candy 1200 .

One of my Diet Masters members read the blog for the first time and she wrote the following.

I re-read one of the meetings that was in my files and it does just that. The following material contains excerpts from what I discussed in class.

Our plan is to teach you how to keep the weight off once you worked so hard to lose it. What good are low calorie recipes and foods if you double or triple portions?

Knowing a great deal about weight loss is not a prime factor in losing weight. You can have all of the answers but if you do not have a firm resolve you will soon regain the weight that you worked so hard to lose.

Keep food out of the house that you cannot control.

Over 25 years ago I used to bring poems about dieting that I wrote to my meetings and they were a hit. My volunteer Chris, loved them and she proved to be more talented than I at writing poems. I put them into a self published book.

From time to time I will include one of the poems in my blog. These poems will give you the feeling that you are not alone in your journey to lose weight and keep it off. They will make you chuckle.

CAN THESE PROBLEMS MAKE YOU GAIN?

OVEREATING CAUSES OVERWEIGHT

MORE WAYS TO RESIST TEMPTATION

Don't be a helpless victim when you go to restaurants. These hints should help you.

. Plan what you will order in advance.
. Have a little something to eat before you leave home if you are hungry.
. If you are "starving" you will attack the rolls and butter. That could be 400 calories.
. Take a dogie bag with you for leftovers and do not eat them when you arrive home.

LISTEN TO LOUISE

If you feel like eating between meals when you are not really hungry, have water or a no calorie
drink. Sometimes it is difficult to stop eating once we start.

Have hobbies and rules. I once hooked a smallish rug and I would promise myself that I could have a small snack after I finished a row. That project took almost an hour and it was time for lunch.

EAT,DRINK AND BE WARY (meaning) BE AWARE OF WHAT YOU PUT IN YOUR MOUTH
If any of you readers are like I WAS, it is easy to devour a thousand calories in a half hour.

I look back at those many years when I ate as much as three people and considered it my way of life, making a promise to get started on my diet the next day.

Did I usually go on that diet? Most of the time I did and would lose the 10 or 15 pounds that I
wanted to. At the same time I was planning to eat the foods I missed. They were my master and I was their helpless victim.

IF YOU DON'T BUY IT YOU WON'T EAT IT



Before you check your groceries out at the register, look through your cart and pretend I am there to advise you.
Louise.."Are you expecting company? That glazed marble cake has 14 servings at 260 calories each and the 2 half gallons of premium ice cream alone total 6,400 calories."

You.."but the ice cream is on sale, two for the price of one. I have my sister and her husband visiting tonight and I want to serve dessert."

Louise: "If you handle sweets the way I used to, once they leave you will eat about 4 servings of each and devour the rest in the course of a week. Let's put those items away and buy 4 chocolate eclairs. They are about 200 calories each. If you feel you must have ice cream, purchase a pint and scoop it on their dishes with just a tiny dab for you."

POST NUMBER 101

When I taught my Diet Masters classes it was my goal to teach the members not only how to lose weight but also how to keep it off.

Now that I have semi-retired I still want to help the masses of people who run from one diet to another and whisper to themselves, "I need help". If you do fall in that category, I hope to bombard you with hints and advice and recipes and menu plans. If you have friends and relatives who can benefit from this, show them how to get on the blog.

IF IT LOOKS AND WALKS LIKE A DUCK..........




There are some bagels usually found in the super market bread isle that make me think of the following saying. It is similar to this: "If it looks like a duck and talks like a duck and walks like a duck, then it must be a duck.''

This makes me think of some fairly new products which are called bagel thins, and sometimes lite bagels and other times low calorie bagels. Here is my take on them.

If you look at them through the clear package, they are shaped like a very thin bagel. If you touch them, they feel like a piece of soft bread. I have purchased two brands and they do not have the taste or quality of a bagel. You can take it out of the package and fold it in half . The calories are between 100 and 110 each.

A MUCH BETTER SOLUTION

Lender's original bagels have the qualities of a "real bagel" and are only 140 calories. They are usually found in the freezer section.

Another solution to enjoying a bagel that IS a bagel would be to purchase your favorite brand of bagels and eat a half. If the calories are not listed, weigh the bagel on a food scale. Most bagels excluding the cinnamon and other sweet ones like raisin are 80 calories per ounce.

If the bagel weighs 3 1/2 ounces, the half would be only 140 calories.
Hint: Savour each bite, and spread it with about a tablespoon of lite or whipped cream cheese.

THOUGHT YOU WOULD ENJOY A RECIPE

It has been a while since I posted a recipe and thought you would welcome the following. This low calorie and easy recipe for an individual apple pie would make a great breakfast...It could also be considered as a dessert for lunch or dinner if you did not include a starch with that meal.

Another way to fit this into your 1200 calorie reducing diet is to have a frozen dinner under about 320 calories and the pie for dessert or a snack between meals.

It would not matter if the frozen meal included a starch. This is how our calorie knowledge clicks in...Example: Your usual breakfast is 225 calorie, your lunch about 350 and the frozen dinner/ pie meal would be 475 for a total of 1050 calories. The extra 150 calories could be spent on skim milk and some frozen fruit to make a smoothie or some cooked vegetables or a nice salad. They do not call me The Calorie Queen for nothing.

EASY NO BAKE APPLE PIE

APPLE PIE WRAP

3/4 cup peeled and sliced apples
1 teaspoon cinnamon sugar
1 8 inch flour tortilla (100 calorie type)

Cook apple slices in the microwave about 2 minutes, or until soft.
Put tortilla on a plate which you cover with a napkin for about 35 seconds.
Sprinkle cinnamon sugar over apples and pour mixture towards the
center of the tortilla and fold in half.

The way I prepare it is to put the wrap on a heated, spray coated small George
Forman grill until the tortilla is lightly browned.
Serves 1, about 155 calories
VARIATION

Instead the grill, you could use a fry pan. Put a flat cover or plate on the wrap and a heavy weight on the plate such as coffee mug or a sauce pan. Brown on both sides.
