LOW IN CALORIES AND HIGH IN SATISFYING THE PALATE
When we order these potatoes with our breakfast in restaurants they are usually greasy and seem to be deep fat fried. An order can easily be 400 calories. Just think, if you ordered one egg with 2 strips of bacon plus a bagel with cream cheese your seemingly small breakfast could add up to 1,000 calories. Many restaurants give you the option of ordering sliced tomatoes or fruit instead of the home fries.
You could order the same meal without the potatoes and eat half of the bagel with a dab of cream cheese and it will lower the calorie count to a realistic 400.
The Diet Lady's Home Fried Potatoes
1 6 to 8 ounce baking potato
a few generous shakes of paprika
salt to taste
2 teaspoons softened diet margarine
Scrub potato and cook in microwave until soft. Peel the skin off. Preheat your small or medium George Forman Grill. Cut peeled potatoes in large dices and mix in the margarine. Sprinkle with paprika and salt to taste and mix. Spray heated grill with Pam and spread the potatoes on the surface of the grill. Leave about 4 minutes until brown and turn for a minute or two; until they become crusty.
serves 1, about 145 calories
Note: These potatoes are usually served at breakfast but they make a great side dish with fish, chicken or meat at dinner.
